Bonnezeaux - Château de Fesles

SITUATION: In the heart of the Layon region, on a siliceous slope with a magnificent South-South West exposure.

GRAPE VARIETY: Chenin Blanc 100%

SOIL COMPOSITION: Schiste and Phtanite

VINFICATION: The fully ripe, botrytised grapes are harvested in 5 to 7 succesive pickings, then macerated for 10 to 12 hours at low temperature. Fermentation takes place in 400 litre casks over 1 to 2 months. The wine is then stored in 3 barrels for 10 to 15 months.

TASTING: The wine is bright with a yellow hue and green tints. The bouquet melts into a mesh of fresh fruit (apricot, peach and quince), spice (vanilla, cinnamon and nutmeg), and a touch of oak. Beautifully smooth on the palate, this is 8 a wine to lay down. The bouquet fmishes on attractively lively notes of citrus fruit and orange peel.

DRINKING SUGGESTIONS: Serve cold but not chilled... This wine makes a sublime aperitif and a perfect match for warm pear tart. An unusual accompaniment to poultry and white meats in creamy sauces, it also goes well with fish in wine sauce (monkfish, John Dory). Roquefort and Stilton are traditional partners.
