Anjou Villages - Château de Fesles
SITUATION: At the center of the Layon region on a flint and clay hillside facing south-south west.
GRAPE VARIETY: Cabernet Franc 70 % et Cabernet Sauvignon 30 %
SOIL COMPOSITION: Purple schist and phtanite.
VINIFICATION: The grapes are picked by hand at the very peak of ripeness and entirely destalked. Fermentation takes place in stainless steel vats and wine is fi-equently pumped over. Maceration lasts 15 to 20 days. The wine is aged 6 months in 400 litre barrels.
TASTING: Garnet coloured with magnificent reflections and a powerful, complex bouquet. The schist gives an invigorating fieshness with aromas of flower (violet, iris...) and fluits of the forest (raspberry, strawberry ...). The taste is round, suave and flowing. The wine's structure is well backed up by a powerful but in excessive layer of tannin.
DRINKING SUGGESTIONS: Best served at 17 to 18' C, and decanted if possible. The wine will evolve over 6 to 8 years. A wonderful match for roasted or grilled red meat with a touch of spice. Goes well with lamb or mutton and various soft cheeses such as camembert.
