Anjou Blanc Chenin Sec - Château de Fesles
SITUATION: In the heart of the Layon region, on a siliceous slope with a magnificent South - South West exposure.
GRAPE VARIETY: Chenin Blanc 100 %
SOL COMPOSITION: Schiste and Phtanite
VINFICATION: Following a hand-picked harvest of two separate pickings, the wine is vinified in 2 to 4 years old 400 litre casks for 1 month and then aged on the lees for 4 to 6 months with weekly stirring of the lees in barrels. Bottling in September.
TASTING: A straw-yellow colour with brilliant hints. The perception of the intensity is powerful striking and fresh. The bouquet is dominated by heather, linden and elder tree. There is a fine gustatory balance around a smooth and silky attack. There is no perception at al1 of acidity. The aromatic complexity is expressed by dry fruits (hazelnuts, almonds.. .), elder tree and toast. There is a long after-taste.
DRINKING SUGGESTIONS: Serve between 10-12" degrees Celsius, decanted if possible in order to obtain the best of its potential. It accompanies well fish in a sauce (Pike or Salmon in a butter sauce, fillets of Sole or Monkfish.. .), and many types of shellfish, either grilled or cooked in their juices, as well as white meals in sauce and Goat cheese.
